Rao's Tomato and Red Onion Salad

6-8 very ripe tomatoes washed, cored and cut into 8 wedges each | |
1 large | red onion thinly sliced lengthwise |
1/2 cup | extra virgin olive oil |
3 Tbsp | red wine vinegar |
4-5 cloves | minced garlic |
6 | fresh basil leaves, torn |
1/2 tsp | dried oregano |
To tomatoes add oil and vinegar. Add garlic, basil, salt and pepper. Toss gently to combine. Add oregano and spoon onto chilled plates. For a heartier salad, overlap slices of mozzarella on plate. Spoon salad on top.
