PROCEDIMENTO

Portare a bollore l’acqua con il sale e lo zucchero, quindi aggiungere la farina, mescolarla e lasciarla per 3 minuti chiusa.
Nel frattempo sciogliere il burro e versarlo nel pastello, possibilmente con l’utilizzo di un cutter, al fine di ottenere un impasto ben liscio.
A questo punto aggiungere le uova e l’albume e formare un impasto ben liscio, se l’impasto dovesse risultare troppo duro aggiungere altro albume. Con l’aiuto di una poche e bocchetta liscia nr 12, formare delle piccole nocciole di circa 5 gr l’una su teglia forata, meglio se teflonata. Infornare a 220°C per circa 12 minuti. Farcire
