    1920 g  organic a.p. flour
    54 g  sea salt
    25 g  granulated sugar
Mix together on low with paddle
    1817.6 g  unsalted butter, small pieces
Add in butter all at once and mix on low speed until cornmeal
    474 g  water, ice cold
Add in water all at once and mix until forms ball. Pour onto floured board and pound out al the air. Form into a 6" diameter log. Wrap up and refrigerate.

13 oz-tart shell
40 turnovers-5" diameter
