|25 g||granulated sugar|
|Mix together on low with paddle|
|1817.6 g||unsalted butter, small pieces|
|Add in butter all at once and mix on low speed until cornmeal|
|474 g||water, ice cold|
|Add in water all at once and mix until forms ball. Pour onto floured board and pound out al the air. Form into a 6" diameter log. Wrap up and refrigerate.|
