Banana Cake

2 cups | all purpose flour, sifted, gluten free |
1 teaspoon | xanthan gum, sifted into sugar prior to mixing |
1 teaspoon | baking powder |
½ teaspoon | baking soda |
1 teaspoon | salt |
½ teaspoon | cinnamon |
1 teaspoon | nutmeg |
1teaspoon | cloves |
1/2 cup | cocconut milk |
1 cup | sugar |
½ teaspoon | ginger |
1 cup | mashed bananas, (two or three bananas) |
½ cup | canola oil |
2 teaspoons | apple cider vinegar |
1 teaspoon | vanilla extract |
1 1/2 cups | chocolate chips, (semisweet, dairy free) |
Sift together flour, baking powder, baking soda, and salt. Cream together with coconut milk and sugar. . Add mashed bananas. Mix well. Blend in sifted dry ingredients and fold in. Turn into greased 8x4-inch loaf pan.

Bake for 50 minutes at 350?F. Remove from oven and cool on a wire rack.
