Yield: about 1 slice
|2 cups||all purpose flour, sifted, gluten free|
|1 teaspoon||xanthan gum, sifted into sugar prior to mixing|
|1 teaspoon||baking powder|
|½ teaspoon||baking soda|
|1/2 cup||cocconut milk|
|1 cup||mashed bananas, (two or three bananas)|
|½ cup||canola oil|
|2 teaspoons||apple cider vinegar|
|1 teaspoon||vanilla extract|
|1 1/2 cups||chocolate chips, (semisweet, dairy free)|
Sift together flour, baking powder, baking soda, and salt. Cream together with coconut milk and sugar. . Add mashed bananas. Mix well. Blend in sifted dry ingredients and fold in. Turn into greased 8x4-inch loaf pan.
Bake for 50 minutes at 350?F. Remove from oven and cool on a wire rack.
