Preparare il brodo portando a bollore una casseruola di acqua con cipolla sedano e carota a tocchetti, ginepro e alloro, e un bicchiere di latte. Far bollire il baccalà per 20 minuti, scolarlo e mantecarlo con la frusta a foglia della planetaria aggiungendo olio aglio tritato finemente e prezzemolo, se necessario aggiungere poca acqua di cottura. Aggiustare di sale e pepe e proseguire a montare fino ad ottenere una spuma.

<RecipeText>Pulire le sarde eliminando testa, interiora e lisca ma lasciando attaccata la coda; sciacquarle bene e chiuderle come se fossero ancora intere, tipo fagotto.
Infarinarle, friggerle in abbondante olio di semi ben caldo, metterle ad asciugare su carta assorbente e regolarle di sale. Per rendere il tutto più light, si può evitare di infarinarle, e saltare solo 5-10′ le sarde con poco olio d’oliva.
2. Affettare le cipolle (solo bianche, mai rosse!) e metterle a stufare con un po’ di olio extravergine d’oliva facendole cuocere molto lentamente e fino a quando non si appassiscono. Salare, pepare, aggiungere lo zucchero, poi l’aceto e far evaporare.
3. A fine cottura, unire l’uvetta precedentemente ammollata in acqua tiepida e i pinoli. Aggiustare di sale e pepe e versare il composto con le cipolle, ancora calde, sulle sarde, già disposte in una pirofila (possibilmente in vetro e chiudibile).
Fate riposare il piatto minimo 24 ore (meglio 36!) prima di servire, fresco ma non troppo freddo di frigo.
