Loaded Baked Potato Soup

6 large | potatoes, peeled and cubed |
1 large | carrot, peeled and sliced thin |
1 large | onion, diced |
1/2 lb | bacon, cooked and chopped |
1 quart | chicken broth |
3 | garlic cloves, minced |
1/4 cup | butter |
Salt to taste | |
Pepper to taste | |
1 cup | cream or 1 cup 1/2 and 1/2 cream |
1 cup | shredded cheddar cheese |
Add first nine ingredients to crockpot. Cook on low for 8 hours or high for 4 hours. After potatoes are soft, mash or blend together. Add Cream and cheese.
Garnish: chives, sour cream, bacon, and cheese
