Rick’s Carrot Casserole

Peel, slice (1/2 inch), 2 bags of carrots, boil ~ 5 min. Not too long - will get mushy.

Rinse in cold water and put in mixing bowl.
Sauté one large onion in one stick of butter.
Strain - save butter.
Mix carrots, onion and one 8 oz pack shredded cheddar cheese.
Smash ritz crackers in the tube/package.
Add to butter and stir.
Put carrot mix in greased baking dish.
Top with buttery crackers.
Bake 350 for 30-45 min until melted cheese and bubbly. I cover with foil for the first ~ 20 min then remove foil / don’t want crackers to burn.
