    2 ea 8 oz  amish Airline chicken breast
    1 pint  cherry tomatoes
    6 oz  orzo pasta, blanched al dente
    49 grams  broccolini, 2 pieces per dish
    6 grams  salt
    2 grams  black pepper
    1/2 gram  lemon zest
    20 grams  red wine vinegar
    20 grams  dried chorizo
    2 grams  micro basil
    10 grams  olive oil
    1 gram  parsley, chopped

1. Blanch orzo pasta

2. Season and sear amish chicken breast

3. Smoke 3/4 pint of cherry tomatoes and then add to half of olive oil and all of red wine vin

4. Blanch broccoilini and shock until bright green

5. Blister remaining cherry tomatoes and all broccolini

6. Toss orzo with blisterd tomatoes, chopped parsley, lemons zest and half smoked
tomato vin

7. plate orzo mix and top with chicken and broccolini

8. finish with Smoked tomato vin and micro basil
