Healthy Baked Oatmeal
Nb persons: 6
|3 cups||skim milk, plus more for serving if desired|
|6 tbs||packed brown sugar*|
|1 1/2 tbs||margarine|
|2 tsp||ground cinnamon|
|1 1/2 cups||old fashioned oats|
|1 1/2 cups||peeled, finely chopped apples|
|3/4 cup||dried cranberries|
|3/4 cup||coarsely chopped walnuts or pecans|
Directions for Healthy Baked Oatmeal
Preheat oven to 350 degrees.
Coat a 9 inch square baking dish lightly with cooking spray. Set aside.
Mix brown sugar, margarine, cinnamon and milk in a medium saucepan. Bring to a boil, stirring frequently.
In another bowl, mix oats, apple, cranberries and nuts. Spread this mixture evenly in prepared baking dish.
When milk mixture has begun to boil, pour it over oatmeal and fruit mixture.
Bake for 30 minutes, uncovered.
Healthy Baked Oatmeal is done when all liquid is absorbed and oatmeal is soft and ready to eat. Garnish with fresh apple slices.
Makes 6 servings.
