Basic Tomato Sauce

|1//2 cup||Filtered water|
|1 cup||finely diced onions|
|1/2 cup||finely chopped garlic|
|2 tablespoons||dried basil|
|2 tablespoons||dried oregano|
|2 tablespoons||dried parsley|
|1 can||tomato paste, 4 ounce size|
|1 can||tomato sauce, 14 ounces|
|1 cup||red wine, good enough to drink|
|2 cans||crushed tomatoes, 28 ounces per can|
|1/2 tablespoon||ground black pepper, or to taste|
|1 cup||fresh basil leaves chopped|
Place 1/2 cup of the water and all of the onions in a large pot. Cook and stir over medium heat for 5 to 7 minutes, until the onions are soft. Add the garlic and cook and stir for 2 to 3 minutes. Add the dried basil, oregano and parsley and cook and stir for 2 minutes, until the herbs are lightly toasted. Stir in the tomato paste and cook and stir for 2 to 3 minutes, until it turns a rusty color.
Stir in the wine and cook for 10 minutes or unitl the liquid is almost gone. Add the tomato sauce and crushed tomatoes and simmer for 30 to 35 minutes stirring occasionally. Season with salt and pepper to taste.
Remove from heat and stir in the fresh basil leavesl. Stored in a covered container in the refrigerator, Basic Tomato Sauce will keep for up to 4 days. It can also be frozen up to 1 month.
