Red Beans and Rice

    1 1/2 cups  dry beans
    5 cups  water
1 smoked ham hock (1/2 to 3/4 pound) (you can omit, use 1/4 tsp liquid smoke)
    1 1/4 cups  water
    1 large  onion, diced
    1/2 tsp  onion powder
    1/2 tsp  garlic salt
    1/4 tsp  red pepper flakes
    1/2 tsp  salt
    3 tbsp  lard
    1/4 tsp  freshly ground pepper
Sauté onion, next add the rest of ingredients and cook under pressure for 50 minutes. Once timer beeps simply let out steam, take off lid and let sit for 12 minutes. Serve with cooked rice.
