|1 whole chicken. Cooked and de-boned.|
|1lb.||Smoked or andouisse sausage.|
|1 12 oz. frozen shrimp. (Optional).|
|1/2 cup||finely chopped celery|
|1 tsp||tyme. To taste.|
|1tsp||cayenne pepper to taste|
|Broth from boiled meat.|
|3-4||chicken bouillon cubes|
Kitchen Bouguet to taste and color.
Boil chicken and chopped sausage in enough water to cover the entire chicken.
Approx. 45 minutes.
Remove. Save leftover broth.
De-bone chicken. Set aside with the sausage.
In a frying pan add butter, onion, celery. Cool til tender. Add flour. Mix together. Turn in the vegetables into left over broth.
Add meat back to pot. Let simmer 1 hour.
Add KB to desired color and taste. Slowly. Either add minute rice, or serve over rice.
