Chicken Bruschetta

Ingredients | |
1 lb | cored, seeded and diced Roma tomatoes, (about eight small tomatoes) |
1/2 Cup | diced red onion |
Three large | garlic clothes minced about 1 tsp |
2 tbsp. | minced fresh basil |
To tbsp. balsamic vinegar | |
1tbsp. | Extra-virgin olive oil |
1 tbsp | honey, (can be deleted if tomatoes are fresh and in season) |
1/2 tsp | freshly ground black pepper |
1 1/2 lbs. | boneless skinless chicken breasts, ( about four 6 oz chicken breasts) |
1 tsp | garlic powder, ( or to taste) |
1 tsp | Italian seasoning |
Directions
1. In a large bowl stir together first eight ingredients and 1/2 teaspoon black pepper
2. Preheat indoor or outdoor grill to high. Season chicken breast with remaining black pepper garlic powder and Italian seasoning blend. Grill 45 minutes per side or until cooked through.
3. To serve for 3/4 cup of fresh tomatoe mixture over each chicken breast. Serve with
