Zucchini Tots (Serves 5-6)
    4 medium-sized  zucchini
    ¾ cup  bread crumbs
    ¾ cup  cheddar cheese, shredded
    2  eggs
    1 tablespoon  garlic powder
    1 teaspoon  pepper
      Salt, (to pull moisture from the zucchini)

To start, heat the oven to 200˚C.

Grate the zucchini into a bowl and salt generously, then let it sit for 20 minutes. The salt will draw out the moisture from the zucchini.

Pour zucchini onto a clean dish towel and squeeze out any excess water.

Place the grated zucchini back into the bowl and add in the bread crumbs, cheese, eggs and seasoning. Mix everything together until well-blended.

Using your hands, shape a tablespoon full of mixture by rolling and pressing lightly to form a tot. Repeat for rest of mixture.

Place the tots on a greased baking sheet and bake in the oven for 20-25 minutes or until tots are golden brown and crunchy.
