Using a lightly-damp towel, gently wipe dirt from mushrooms. Leave small ones whole but cut larger ones to approximately the same size. Heat 2 Tbsp butter with a little olive oil in skillet. Sauté mushrooms for about 3 minutes, then add minced garlic and toss for another minute, just enough to begin to soften mushrooms. Place mushrooms in a bowl and toss with remaining ingredients. Marinate at room temp at least 20 minutes, or up to 4 hours. Serve at room temp. Store leftovers in fridge.
