| 1c | carrot, grated |
| 1c | zucchini, grated |
| 1 1/2c | plain flour |
| 3tbs | baking powder |
| 1c | cheese, grated |
| 2 | eggs |
| 1/3c | olive oil |
| 1/2c | milk |
* preheat oven to 180 and grease muffin tin
* mix veg, cheese (saving some), flour and baking powder. Combine
* in separate bowl whisk eggs, oil and milk
* add wet ingredient to dry, stir until combined
