Cheeseburger Soup (Kimmie's)

Ingredients | |
6 | potatoes peeled and diced |
4 C | chicken broth |
1 C | shredded carrots |
½ lg | onion chopped fine |
4 Tbs | butter |
2 lbs | ground beef |
1 Tbs | dried parsley |
1 Tbs | garlic powder |
1 tsp | basil |
Salt | |
pepper to taste | |
2 Tbs | flour |
1 can cream of chicken soup + 1 can of milk | |
20oz | Velveta cheese |
2 C | shredded sharp cheddar cheese |
Directions
1. In stock pot add broth, carrots and diced potatoes bring to boil and cook potatoes till fork tender.
2. In fry pan on med heat melt 2 Tbs butter and cook onions till clear then add them to the broth.
3. Use same fry pan to brown ground beef, parsley, garlic, basil, salt and pepper. When meat is brown, do not drain and stir in flour. Add browned meat to broth.
4. Add cream of chicken soup, milk and 2 Tbs butter, Velveta and shredded cheese to broth.
5. Stir until all cheeses are melted and combined.
6. Cook for 15 min and enjoy
Use chopped pickles, tomatoes, shredded lettuce, croutons and shredded cheese as toppers.
