Spicy Shrimp, Cheesy Orzo, and Roasted Green Beans

1/2 lb. | orzo pasta |
1-1/2 lb. | green beans |
1/4 cup | EVOO |
1/4 lb | chorizo |
1 | onion chopped |
1 | red bell pepper chopped |
1small | jalapeño seeded & chopped |
1 large clove | garlic pressed |
1 tsp. | Paprika |
1-14.5 can | diced tomatoes |
1cup | grated manchego cheese |
1/3 cup | flat leafed parsley |
Bring large pot of water to boil add salt and orzo & cook until dente. Drain & transfer to bowl. While pasta is cooking, preheat oven to 400. Spread green beans on a rimmed baking sheet & drizzle with 2T EVOO. Season with salt and pepper. Roast until browned and tender 12-15 minutes. In a large deep skillet, heat 1 T EVOO 1 turn of the pan over medium high heat. Add chorizo & cook for 1 minute. Add onion, bell pepper, jalapeño, & garlic. Season with salt and pepper & cook for 5 minutes. Season shrimp with paprika and add to mixture. Add tomatoes and cook until shrimp are pink and firm--5 minutes. Stir in 1 T EVOO, cheese and parsley. Serve shrimp with orzo and green beans.
