Varied toppings of salsas, guacamole, cheese, sour cream, fresh cilantro, black beans, sweet corn, etc. | |
1/2 cup | onion, diced |
1 | red bell pepper, diced |
1 | jalapeno, seeds removed and diced |
1 clove | garlic, diced |
1 can (14.5 oz) | diced tomatoes, drained |
2 cups | white rice |
1 pkg. | low sodium taco seasoning |
2 1/2 cups | low sodium chicken broth |

Directions
STEP 1
In a large saucepan, add sausage and crumble over medium heat with a potato masher until fully cooked, about 5 minutes.
STEP 2
Add onion and peppers continue to cook until onions are translucent and peppers are tender.
STEP 3
Add garlic to the pan and sauté 30 seconds or until garlic becomes fragrant.
STEP 4
Add diced tomatoes, rice and taco seasoning. Stir to incorporate.
STEP 5
Add chicken broth and bring to a boil. Cover. Reduce heat and simmer for about 15 minutes until the rice is tender and the liquid is absorbed.
STEP 6
Place bowls of toppings for guests to add the toppings of their choice.
