Zucchini Spaghetti

2 | zucchini, small enough to shred with a Veggetti shredder |
1 TBS. | Oliver oil |
1/4 cup | water |
Shred zucchini into spaghetti strips with Veggetti shredder. Wrap shredded zucchini in paper towels for about 20 mins. to remove excess water. Heat oil in skillet on medium heat. Cook and stir zucchini for 1 min. Add water and cook 5-7 mins. Season with salt and pepper. Use in place of pasta with spaghetti sauce.
