Avocado Smash Corn on the Cob

1 cup | red onions, chopped |
1/3 cup | white wine vinegar |
1 Tbsp | sugar |
1/2 tsp | yellow mustard seed |
1 | avocado |
4 ears | corn, grilled |
1. Place the onion in a bowl. In a saucepan, bring the vinegar, sugar, mustard seeds, 1/2 cup water, and 1 tsp salt to a boiling, stirring until the sugar and salt dissolve. Stain over the onion. Let cool; drain.
2. In another bowl, roughly smash the avocado with a fork; season. Top the warm corn with avocado, onions and black pepper.
