Carrot Ginger Soup

Peel and cut 4 carrots | |
1 cup | Vegetable Stock |
1 cup | chopped onion |
3 T. | Butter |
3 T. | Flour |
1 tsp. | Salt |
1/2 tsp. | Pepper |
2 cups | water |
2 cups | cream |
Method
Combine carrots, vegetable stock, onion in a pan and cook until tender.
Let cool and purée in blender
Melt butter and stir in flour and salt and pepper.
Add milk and cream and stir until thick.
Add the carrot mixture.
Option
Add 1 diced potato to vegetable mixture when cooking them
Option
Put 1-2 tsp. Of candied ginger in bottom of serving bowl and pour hot soup over.
Option
Add 1-2 tsp. Curry to soup.
