Chocolate cake | |
125 g | bittersweet chocolate |
125 g | butter |
3 | eggs |
125 g | sugar |
40 g | flour |
Caramel sauce | |
100 g | sugar |
25 ml | water |
50 g | glucose |
250 ml | cream |
50 ml | milk |
CARAMEL SAUCE 1. Cook sugar + water + glucose till caramel color 2. Warm milk + cream / warm water in separate pan 3. Add warmed water to caramel off the heat / add warmed milk-cream to caramel / return to heat / move to bowl over iced water |
Chocolate cake
1. Chocolate – melt over bain-marie
2. Mix ½ of sugar + eggs
3. Blanchir other ½ of sugar + softened butter / add flour / add melted choco to egg-sugar mixture / mix with butter-sugar mixture slowly
4. Move to piping bag / chemiser mold sides + bottom with paper / pour filling into molds ¾ the height of the mold / refrigerate to set * or maybe kept frozen
5. 180* oven
