Parmesan-Crusted Pork Chops

8 (1 inch thick) | center cut pork chops on the bone or boneless |
Salt, to taste | |
ground pepper, to taste | |
2 tablespoons | extra-virgin olive oil |
Dijon mustard, to coat chops | |
1 cup | freshly grated Parmesan |
Romano cheese, alternative |
Preheat oven to 350*
Season chops both sides with salt and pepper
Heat olive oil in heavy skillet. Add chops and sear for about 3 min on each side till light brown
Move chops to sheet pan, coat tops with mustard and then cheese
Cook for 10-12 min
