Sweet Pepper Brown Rice

1 C | uncooked brown rice |
10 small | sweet peppers |
1 clove | garlic |
2 small | shallots |
1 t | paprika |
1/2 t | salt |
1/2 t | cayenne pepper |
1/2 t | black pepper |
3 T | olive oil |
Make brown rice, drain, and set aside.
Using a medium fry pan, add olive oil, diced shallots and peppers, and minced garlic. Cook for a few minutes to soften the peppers.
Stir in rice and spices, mixing it well. Reduce heat and cover for a minutes.
Serve with a meat.
