Ingredients:
    1/2 cup  quinoa, rinsed if necessary
    1/4 cup  extra virgin olive oil
    1/4 cup  fruity vinegar, such as raspberry or pomegranate
    3/4 tsp  salt
    1/4 tsp  freshly ground pepper
    2 cups  dried fruit
    2 stalks  celery, diced
    3/4 cup  diced pears
    1/2 cup  chopped pecans, toasted
Bring a large saucepan of water to a boil over high heat. Add quinoa and cook until tender, about 15 minutes. Drain and rinse with cold water until cool to touch; drain well. Meanwhile, whisk oil, vinegar, salt and pepper in a large bowl. Add quinoa, dried fruit, celery, pears and pecans and toss to combine. Serve at room temperature or cold.
