Quinoa salad with pears and dried fruit (Nebu)

1/2 cup | quinoa, rinsed if necessary |
1/4 cup | extra virgin olive oil |
1/4 cup | fruity vinegar, such as raspberry or pomegranate |
3/4 tsp | salt |
1/4 tsp | freshly ground pepper |
2 cups | dried fruit |
2 stalks | celery, diced |
3/4 cup | diced pears |
1/2 cup | chopped pecans, toasted |
Bring a large saucepan of water to a boil over high heat. Add quinoa and cook until tender, about 15 minutes. Drain and rinse with cold water until cool to touch; drain well. Meanwhile, whisk oil, vinegar, salt and pepper in a large bowl. Add quinoa, dried fruit, celery, pears and pecans and toss to combine. Serve at room temperature or cold.
