1 pound | cream cheese, (softened to room temperature) |
1 cup | sharp, white cheddar cheese, (shredded) |
3 tablespoons | horseradish, (freshly grated or prepared) |
1/8 teaspoon | cayenne pepper |
2 tablespoons | chives, (chopped) |
1 cup | pecans, (toasted, chopped, divided) |
1/2 cup | dried sour cherries, (chopped, divided) |
1/2 cup | dried apricots, (chopped, divided) |
whole wheat gourmet crackers (to serve)
step-by-step directions
In a large bowl, add the cream cheese, cheddar cheese, cayenne, horseradish, chives, half the pecans and half of the cherries and apricots, and mix well to combine. Cover and refrigerate for at least 30 minutes.
Shape cheese mixture into a ball. In a shallow bowl, combine the remaining cherries, apricots, and pecans, and toss to combine. Roll the cheese ball in the dried fruit and pecan mixture. Serve with crackers.
Helpful tip: divide mixture in half to make two smaller cheese balls to replenish appetizers throughout the party.
