Fish stock, (grouper fish, onion pieces, 5 cloves of garlic, leek, sliced carrot, bay leaves and rock salt boiled for 20 minutes and strained |
Add olive oil to pan (paella) to heat. Add the peppers and stir a bit. Add the shrimp, scallops and squid. Sauté all of the ingredients and then add garlic and tomato. Add the rice, then saffron. Add the fish broth and at the end the fish. Once the rice absorbs most of the liquid, turn down the heat and cover for 15 minutes.
