POPCORN - Spicy Peanut Popcorn Balls

1 cup | sugar |
1/3 cup | water |
1/4 teaspoon | cayenne pepper |
6 cups | popped popcorn |
1/2 cup | brown sugar |
1 cup | corn syrup |
6 tablespoons | butter |
1/2 teaspoon | salt |

In a large cast-iron skillet, add peanut oil and heat over medium heat. Add peanuts and toast until golden brown, about 5-7 minutes. Set aside to cool. Add the soy sauce and stir to combine.
Line a baking sheet with parchment paper. In a large pot, add the sugar, water and peanuts and stir to combine. Heat over medium heat until the sugar begins to caramelize and coat the peanuts, about 8 minutes. Continue shaking the peanuts to coat in the amber-colored melted sugar. Remove the peanuts to the parchment, sprinkle with cayenne and allow to cool. Break cooled peanuts into small pieces.
In a large bowl, place the popcorn and peanuts and mix to combine.
In a small saucepan, add the brown sugar, corn syrup, butter and salt. Bring to a boil. Stir for 2 minutes until the sugar reaches 255 degrees on a candy thermometer. Working quickly, pour over the popcorn and stir to coat. Grease hands with oil spray or butter and form the mixture into 1 1/2-inch popcorn balls.
Helpful Tips:
- Instead of making caramel, melt marshmallows and butter together to combine the peanut and popcorn mixture.
- Replace the peanuts and soy with your favorite candy, such as candy corn!
