Crisp white sangria

2 cups | white grape juice divided |
1/4 cup | berry sugar |
1 bunch | fresh mint |
1 bottle | dry white wine |
1 1/2 cups | unsweetened apple juice |
1 lime juice only | |
2 | limes thinly sliced |
1 cup | seedless green grapes halved |
3 cups | soda water chilled |
1 green apple cores cut into thin wedges
1. In a small saucepan over med heat combine 1 cup grape juice and berry sugar stirring to dissolve sugar. Remove from heat and stir in 2 sprigs of mint. Bring to room temp.
2. In a large container at least for 2L combined cooled and remaining grape juice with several more sprigs of mint, wine, apple juice and lime juice. Refridgerate overnight for flavours to meld.
4. Pour half the sangria mixture into pitcher and top with chilled soda water.
5. Serve sangria over ice in a cocktail glass. Garnished with lime and apple and a sprig of mint.
