This grown-up version is spiked with booze.
Add 3/4 ounce Fox’s U-Bet Chocolate Syrup to a 10-ounce fountain-style glass. Add 3/4 ounce very cold whole milk. Add 1 1/2 ounces gold rum, such as Mount Gay Eclipse, and 1 teaspoon Lactart (optional). Fill glass with seltzer, stirring quickly with a bar spoon until frothy. Serve.
