Apricot or peach sorbet float

1 cup | sugar |
1 lb | apricots or peaches. Pitted and sliced plus more for serving |
3/4 cup | sparkling wine plus more for serving |
1. Being sugar and fruit and wine and 2 cups water to a boil in med saucepan. Reduce heat and simmer, stirring occasionally. Until fruit is tender. Let cool completely.
2. Transfer to blender. Purée. Add water til it measures 4 cups. Transfer to shallow baking dish. Freeze until solid at least 4 hours. Or use ice cream machine
3. To serve scoop into glasses or bowls and top with more fruit slices and some sparkling wine.
