Classic French vinaigrette

1/4 cup | white wine vinegar |
1 clove | minced garlic |
1 tbsp | Dijon mustard |
1/2 tsp | dried thyme |
1/2 tsp | salt |
1/4 tsp | sugar |
1 cup | olive oil |
1. In a bowl whisk vinegar with garlic, Dijon, thyme, salt and sugar. Slowly whisk in oil until evenly mixed. Can use blender as well. Taste and add more sugar if needed. Dressing will keep 1 week.
Mix and match: stir in minced anchovies, sun dried tomatoes, crumbled blue cheese, chopped pine nuts or minced jalapeƱos
Swap: honey, brown sugar or maple syrup for sugar. Herbed seasoned white wine, rice wine vinegar, regular white vinegar or apple cider vinegar for white while vinegar
