MARIO BATALI Kalua Pork with Mashed Sweet Potatoes The Chew ingredients KALUA PORK WITH MASHED SWEET POTATOES
    5 pound  boneless pork shoulder
    6 tablespoons  sea salt
    2 tablespoons  worcestershire sauce
    1 tablespoon  fish sauce
    2 tablespoons  tamarind extract
    3-5  banana leaves
    3-4 cups  water,, (more as needed)
FOR THE MASHED SWEET POTATOES
    1 1/2 pounds  sweet potatoes,, (peeled and diced)
    1 pound  manioc, or substitute yucca (peeled and diced)
    1 cup  coconut milk,, (warmed)
    1 tablespoons  freshly grated ginger
    2 tablespoons  honey
    1 teaspoon  vanilla extract
      kosher salt

step-by-step directions
Preheat oven to 325°F.
Score the pork shoulder using a paring knife, by making light incisions in a 1-inch diagonal pattern. Combine the Worcestershire sauce, fish sauce, tamarind extract and salt to make a paste. Rub the pork with the paste, being sure to get into the slits.
To wrap the pork, lay 3-5 banana leaves (depending on the size of the pork) on a piece of aluminum foil, slightly overlapping each other. Lay the pork on top of the banana leaves and wrap them up around the pork. Wrap the foil up around the entire pork to secure the banana leaves.
Place in a roasting pan and fill with enough water to come up about 2 inches. Place in the oven and cook for 5 to 6 hours, adding water to the pan if needed.
When fork tender, remove from oven and shred with a fork.
Serve with mashed sweet potatoes.
For the mashed sweet potatoes: Add the sweet potatoes and manioc to a large stock pot and add enough cold water to cover by an inch. Place on medium-high heat and bring to a boil. Reduce to a simmer and continue to cook until tender, about 30 minutes.
Strain and return to the pot. Using a potato masher, begin to mash the potatoes and manioc. Mix in the coconut milk, ginger honey and vanilla extract. Season with salt.

Tips
- If you don't have banana leaves, simply wrap the pork in tinfoil.
- Replace the manioc with any starchy vegetable such as an Idaho potato, etc.
