Pop up buttermilk biscuits

3 cups | flour |
3 tsp | baking powder |
1/2 tsp | salt |
1/2 tsp | baking soda |
12 oz | cold butter, cubed |
1 cup | buttermilk |
1 tsp | pepper |
1 tbsp | cream for brushing |
Kosher salt | |
sugar for sprinkling |
1. Combine dry ingredients. Cut in butter.
2. Add buttermilk. Bring down together but don't over mix
3. Wrap dough in plastic wrap and refrigerate for 1 hour. Transfer to lightly floured board. Roll out til 1 inch thick
4. Punch out biscuits. And transfer to greased sheet pan. Spacing about an inch apart. Place in fridge and rest for 15 min. Preheat oven to 400. Remove biscuits. Sprinkle with salt and or sugar. Bake for 12-15 minutes or golden brown.
