Mexican Pizza

1 lb. | ground beef |
1 package | taco seasoning |
12 large | flour tortillas |
1 can | refried beans |
1 recipe | enchilada sauce |
2 cups | shredded Cheddar cheese |
1 | chopped tomato |
Chopped green onions | |
Sliced black olives | |

Brown & crumble the ground beef. Add the taco seasonings & 3/4 cup of water. Bring to a boil, reduce heat & simmer 5 minutes or until most of the water is gone. Set aside.
Spread about 1/3 cup of the beans on to 6 of the tortillas. Spread the meat mixture over the beans evenly. Top with another tortilla.
Preheat oven to 500 degrees F.
On a hot griddle, cook the double tortillas 3-5 minutes in each side, until golden brown. Remove to a large baking sheet.
Top each pizza base with enchilada sauce. Sprinkle with cheese, green onions, black olives & tomatoes. Bake 3-5 minutes, or until cheese is melted & pizzas are heated through.
Slice with a pizza cutter & serve with sour cream.
