Balsamic Roasted Chicken and Cherry Tomatoes

Pop this sweet, tangy chicken skillet in the oven when you get home from work, then kick off your evening for one with a glass of red. Forty-five minutes later? You're totally relaxed—and dinner is served. | |
1 | boneless, skinless chicken breast |
1 Tbsp | balsamic vinegar |
1 Tbsp | olive oil |
½ cup | cherry tomatoes, halved |
2 cloves | garlic |
½ Tbsp | fresh basil |
Salt, to taste | |
pepper, to taste |
1. PREHEAT oven to 375°.
2. PLACE chicken breast in an oven safe skillet or dish.
3. COMBINE balsamic vinegar and olive oil, and pour over the chicken.
4. ADD tomatoes, garlic, and basil to skillet. Season with salt and pepper, to taste.
5. BAKE for 40-45 minutes, or until chicken is completely cooked through. Serve warm.
