MARINATED PEPPERS AND ONION (cooks.com)*

1/2 med. | white onion |
1/2 med. | red onion |
1 lg. | tomato |
1 1/2 tbsp. | olive oil |
1 1/2 tbsp. | fresh lemon juice |
1 1/2 tbsp. | fresh lime juice |
1/2 tsp. | salt |
3/4 tsp. | black pepper |
1/2 tsp. | Tabasco sauce |
Cut peppers in half, remove seeds and cut crosswise into 1/4 inch rings. Cut onions in half, then into 1/4 inch rings. Coarsely chop tomato.
In a covered jar, combine olive oil, lemon juice, lime juice, salt, pepper and Tabasco. Pour over vegetables and toss. Chill 2-3 hours. Makes 4 servings.
