Ingredients 3 boneless skinless chicken breasts 1 1/2 lbs or you can use 2 1/2 cups shredded roasted or rotisserie chicken
    1 stalk  celery, diced
    1 medium  Granny Smith Apple, diced
    2/3 cup  mayonnaise
    Juice of half a  lemon
    1 tsp  Dijon mustard
    1 tsp  finely chopped parsley
      dill, alternative
    1  green onion, thinly sliced
      Kosher salt
      fresh pepper

Place the chicken in a high sided skillet and cover with cold water. Add pinch of salt and pepper to the water. Bring to a boil, reduce the heat to low, cover, and poach the chicken for 10 minutes, until firm to the touch, opaque and a thermometer inserted into the thickest part of the chicken registers at 165 degrees.
