Simple chicken salad with green apples

Ingredients 3 boneless skinless chicken breasts 1 1/2 lbs or you can use 2 1/2 cups shredded roasted or rotisserie chicken | |
1 stalk | celery, diced |
1 medium | Granny Smith Apple, diced |
2/3 cup | mayonnaise |
Juice of half a | lemon |
1 tsp | Dijon mustard |
1 tsp | finely chopped parsley |

1 | green onion, thinly sliced |

Place the chicken in a high sided skillet and cover with cold water. Add pinch of salt and pepper to the water. Bring to a boil, reduce the heat to low, cover, and poach the chicken for 10 minutes, until firm to the touch, opaque and a thermometer inserted into the thickest part of the chicken registers at 165 degrees.
