Zucchini Bread

1¾ cups | whole wheat pastry flour, (could sub all purpose) |
1 tsp. | cinnamon |
¾ tsp. | salt |
¾ tsp. | baking soda |
½ tsp. | baking powder |
1 | ripe banana, mashed |
½ cup | sugar |
⅓ cup | coconut oil |
2 tbsp. | unflavored soy or almond milk |
1 tsp. | vanilla extract |
1 cup | grated zucchini |
½ cup | raisins |
½ cup | walnuts |
INSTRUCTIONS
Preheat oven to 350°.
Grease or coat loaf pan with cooking spray.
Stir flour, cinnamon, salt, baking soda and baking powder together in medium mixing bowl.
In a separate bowl, stir sugar and banana together. Add oil, milk and vanilla extract.
Add banana mixture to dry ingredients and stir just until blended.
Fold in zucchini, followed by raisins and walnuts.
Pour mixture into loaf pan. Bake 50-55 minutes.
