Spice Rub for Salmon

1 tablespoon | fennel seed |
1 teaspoon | dried oregano |
½ teaspoon | crushed dried rosemary |
½ teaspoon | crushed red pepper flakes |
½ teaspoon | granulated garlic |
Kosher salt, to taste | |
1 ½ teaspoon | organic orange zest |
1 teaspoon | dark brown sugar |
1. In a mortar, combine the fennel, oregano, rosemary, red pepper, garlic, and salt. Use a pestle to crush the spices until most of the fennel seed is broken down. (Alternatively, pulse in a coffee or spice grinder.) In a small bowl, use your hands to combine the zest and brown sugar, rubbing the zest until well-coated. Add the crushed spices and combine until evenly distributed.
2. Pat 4 salmon steaks (6-8 oz each), about 1-inch thick salmon steaks dry, then generously rub one-quarter of the spice mixture into the top of each steak.
3. On an oil-rimmed baking sheet, bake in an oven heated to 375° for 12 to 15 minutes, until salmon is just cooked through.
