Oreo cake

20 Oreo cookies | |
1 1/2 cups | flour |
1 tsp | baking powder |
1 tsp | baking soda |
In sweetened cocoa 2 eggs separated | |
1 cup | sugar |
2/3 cup | butter divided |
1 cup | water |
1/2 cup | sour cream |
2 squares | baking chocolate melted |
2 1/2 tsp | vanilla divided |
1 pkg 16 oz | icing sugar divided |
3 tbsp | milk |
Chocolate icing
1. Preheat oven to 350. Coarsely chop 7 of the cookies and set aside. Finely crush the remaining cookies. Put in med bowl. Add flour, baking powder and baking soda mix well. Set aside. Grease 2-9 inch round cake pans. Lightly dust with cocoa. Set aside.
2. Beat egg whites in small bowl with an electric mixer on high speed until stiff peaks form. Set aside. Place sugar, 1/3 cup butter and egg yolks in a large bowl of electric mixer. Beat on med until well blended. Add flour mixture, water and sour cream, melted chocolate and 1 tsp of vanilla, beat on med speed for 1 min. Add egg whites and stir gently until well blended. Spread evenly into prepared pans.
3. Bake 25 min or until toothpick inserted in centre comes out clean. Cool in pan on wire rack 10 min. Remove and cool completely.
4. Beat remaining 1/3 cup butter, remaining 1 1/2 tsp vanilla and 1 cup powdered sugar in a med bowl with an electric mixer until well blended. Add remaining powdered sugar alternately with milk beating until well blended after each addition. Reserve 1/2 cup of frosting.
5. Place 1 of the cake layers on serving plate. Spread with remaining frosting. Sprinkle with chopped cookies. Top with remaining cake layer. Spread chocolate icing over top cake later and sides letting the white icing in the middle peak out like an Oreo cookie. Let stand 10 min or until icing is set. Decorate with reserve frosting as desired
