Lemon Ginger Brew

8 oz | ginger |
6 cups | water |
1/2 cup | lemon juice |
1/3 cup | maple syrup |
Pulse ginger and in a food processor til it's paste. Bring ginger and water to a boil and reduce til there is 3 cups 30-40 min. Strain and add lemon juice and maple syrup. Add more lemon or syrup if desired. Cover and chill. Good for 2 weeks.
