QUINOA - Warm Quinoa Salad

2 cups | cooked quinoa |
1 cup | arugula |
1/4 cup | canned chickpeas, (drained) |
1/2 | red onion, (minced) |
1/4 cup | extra virgin olive oil |
1 | lemon, (juiced) |
1 teaspoon | Dijon mustard |
1 teaspoon | honey |
In a large bowl, whisk together the lemon juice, honey, Dijon mustard and olive oil. Season with salt and pepper. Toss the warm quinoa in the dressing along with the arugula.
