Curried chicken salad

1 med | schooled onion, (1 c) |
1 T | minced garlic |
1 T | minced peeled Ginger |
2 T | beg oil |
1 T | curry powder |
1 t | cumin |
2 med | tomatoes, chopped |
1 c | plain yogurt |
2 T | cilantro |
1 rotisserie chicken, meat coarsely shredded, about 3-4 c | |
1 c | red grapes, halved. |
Cook onion, garlic, ginger in oil in large heavy skill over med heat, stirring occasionally, until softened, about 5 mins. Add curry, cumin, and 1 1/2 t salt and cook 2 mons, stirring occasionally.
Add tomatoes and cook over ,Ed heat, stirring until sauce has thickened, about 5 mins. Transfer to bowl and stir in yogurt, cilantro, chicken. Cool to room temp.
Garnish with grapes.
