Veggie fried noodles

This is a quick, easy and delicious recipe that all will enjoy. Try adding cooked Cubed pork or chicken, bean sprouts, water chestnuts, sliced almonds or any of your favorite vegetables
    2 (3 ounce) packages  ramen noodles, flavor packets discarded.
    3 tablespoons  peanut
      vegetable oil, alternative
    3  eggs, beaten
    4  green onions, thinly sliced 1/2 cup
    1 small  carott, peeled and grated
    1/2 cup  frozen green peas, thawed
    1/2 medium  red bell pepper, finely diced ( 1/4 cup)
    2 tablespoons  sesame oil
    3 tablespoons  low sodium soy sauce

1- boil noodles until soft, about 3 minutes. Drain
2- heat 1 tablespoon peanut oil in a wok or large skillet over medium high heat.
Add eggs, scramble, and transfer to a bowl. Heat another tablespoon peanut oil in a wok, and stir fry onions,carott, peas and bell pepper until onions soften, 3-4 minutes. ( you can also add 1 tbs ginger here for added flavor) add to eggs.
4- heat remaining tablespoon Peanut oil and sesame oil in wok; add noodles and cook, stirring frequently, 2-3 minutes. Add soy sauce, egg, and vegetables, and stir fry , breaking up eggs, until very hot, 3 to 5 minutes.
