Veggie fried noodles

This is a quick, easy and delicious recipe that all will enjoy. Try adding cooked Cubed pork or chicken, bean sprouts, water chestnuts, sliced almonds or any of your favorite vegetables | |
2 (3 ounce) packages | ramen noodles, flavor packets discarded. |
3 tablespoons | peanut |
vegetable oil, alternative | |
3 | eggs, beaten |
4 | green onions, thinly sliced 1/2 cup |
1 small | carott, peeled and grated |
1/2 cup | frozen green peas, thawed |
1/2 medium | red bell pepper, finely diced ( 1/4 cup) |
2 tablespoons | sesame oil |
3 tablespoons | low sodium soy sauce |
1- boil noodles until soft, about 3 minutes. Drain
2- heat 1 tablespoon peanut oil in a wok or large skillet over medium high heat.
Add eggs, scramble, and transfer to a bowl. Heat another tablespoon peanut oil in a wok, and stir fry onions,carott, peas and bell pepper until onions soften, 3-4 minutes. ( you can also add 1 tbs ginger here for added flavor) add to eggs.
4- heat remaining tablespoon Peanut oil and sesame oil in wok; add noodles and cook, stirring frequently, 2-3 minutes. Add soy sauce, egg, and vegetables, and stir fry , breaking up eggs, until very hot, 3 to 5 minutes.
