Chicken fried steak burgers

4 | hamburger patties |
1/2 cup | all purpose flour |
1 tbs | cornstarch |
1/2 tsp | salt |
1/4 tsp | freshly ground black pepper |
1/8 tsp | cayenne pepper |
1/2 tsp | garlic powder |
1/2 tsp | onion powder |
2 tbs | unsalted butter |
1 tbs | extra virgin olive oil |
1 large | Vidalia onion or other seaweed onion cut in half and sliced thinly |
1 cup | beef stock |
1/2 cup | whole milk |
4 large | onion rolls lightly toasted |
1 (4 oz) jar | french fried onions |
Combine the flour, cornstarch, and seasonings. Reserve 3 tablespoons of the flour mixture . Lightly sprinkle the parties with some salt and pepper. Dredge the patties in the flour mixture to coat on both sides. Heat the butter and olive oil in a large skillet over medium high heat and then add the patties. While the patties are frying you can prep the onions. Fry the patties until they're generously browned on both sides, about 4 minutes per side. Transfer the patties to a warmed oven. Add the onions to the skillet and cook until soft and translucent, 5-7 minutes. Add the reserved seasoned flour mixture to the onions and cook for another minute. Add the beef broth and milk, stirring constantly to prevent lumps. Increase the heat and bring it to a boil, deglazing the bottom of pan, scraping up any browned bits. Reduce the heat to low and and simmer for a couple of minutes until the gravy is thickened . Add the chicken fried burger steaks, nestling them in the gravy, cover and simmer 15-20 minutes. Add salt and pepper to the gravy to taste. Place each on the bottom of toasted onion rolls. Spoon some gravy over each steak and top with french fried onions.
