Parmesan & Herb Encrusted Roast Turkey

1 (12-14 lb) | turkey, (thawed if frozen) |
Salt, pepper & granulated garlic to taste | |
1 med | yellow onion, peeled & coarsely chopped |
2 med | carrots, unpeeled & coarsely chopped |
2 stalks | celery, coarsely chopped |
2 c. | Japanese panko breadcrumbs |
1 c. | Parmesan cheese, shredded |
1/2 c. | fresh herbs, (basil, parsley, rosemary, thyme & chives), chopped |
1/4 c. | butter, melted & cooled to room temperature |
1/2 c. | Maille Dijon mustard |
42 oz. | chicken broth |
2 Tbsp. | cornstarch |
2 Tbsp. | water |
1. Preheat oven to 300F.
2. Remove fatty deposits fround inside the skin flaps by the breast & the tail cavities of the turkey & discard.
3. Season inside & outside of turkey well with salt, pepper & granulated garlic.
4. Place turkey in roasting pan with onions, carrots, celery, turkey giblets & neck.
5. Place turkey in oven & roast for approximately 3 hours or until a thermometer inserted into the thickest part of the thigh, next to the wing, reads 120F.
6. While turkey roasts, combine breadcrumbs, cheese, fresh herbs & butter in a medium bowl; mix well.
7. When turkey reaches 120F, remove from oven & brush Dijon mustard over entire breast, legs & thighs. Press breadcrumb-herb mixture onto the turkey over the mustard.
8. Place turkey back in the oven & continue roasting for about 1 to 1-1/2 hours, or until a thermometer inserted into the thickest part of the thigh, next to the wing, reads 165F; remove from oven.
9. Remove turkey from roasting pan & let rest at least 20 minutes before carving.
10. For the sauce: Discard any excess fat from roasting pan. Place roasting pan over medium-high heat, add the chicken broth & let simmer 8-10 minutes.
11. Strain liquid through fine mesh strainer & place liquid back in the roasting pan & bring to a simmer. Taste & adjust the seasonings with salt & pepper, if needed.
12. Mix cornstarch & water together & whisk into simmering liquid. Bring back to a boil. Remove from heat & serve with sliced turkey.
