Peanut Butter Truffle Squares

1/4 cup | butter softened |
1/2 | packed brown sugar |
1/2 | smooth peanut butter |
1 | egg |
1 cup | all purpose flour |
1/4 tsp | baking soda |
Chocolate Truffle Filling: | |
12 oz | milk chocolate |
3/4 cup 35% | whipping cream |
1 tsp | vanilla |
64 | peanut halves, (optional) |
In a bowl, using an electric mixer beat butter, sugar and peanut butter until smooth. Beat in egg until well blended. Stir in flour and baking soda until well blended. Spread and pat into parchment paper lined 9 inch baking pan. Bake in 350 F oven for about 15 mins or until slightly soft in centre and golden around edges. Let cool completely.
Chocolate Truffle Filling: Place chocolate in bowl. Heat whipping cream and vanilla in microwave or in small saucepan until bubbly. Pour over chocolate and whisk until melted and smooth. Pour over cooled cookie base and refrigerate for about 2 hours or until set. Remove from pan and cut into squares. Top each square with a peanut half, if using.
Makes 64 squares.
