MUFFINS - Lemon Chia Seed Muffins

1 3/4 cups | all-purpose flour |
2 1/2 teaspoon | baking powder |
1/4 teaspoon | salt |
3/4 cup | agave |
3/4 cup | part skim ricotta cheese |
1/4 cup | water |
1/4 cup | coconut oil, melted |
Zest of two | lemons |
2 tablespoons | fresh lemon juice |
1 | egg |
2 tablespoons | Chia seeds |
1. Preheat oven to 375°.
2. Line a muffin tin with paper liners or grease with coconut oil.
3. In a large bowl, whisk together dry ingredients.
4. In a medium bowl, mix together the remaining ingredients except for Chia seeds.
5. Make a well in the center of the dry ingredients, pour the wet ingredients in and mix with the spoon. Be careful not over mix. Gently fold the Chia seed into the batter.
6. Divide batter evenly into muffin tin. Bake for about 16 minutes, until a toothpick comes out clean when inserted.
